Easy Gluten Free Pumpkin Muffins

Thanks to Betty Crocker and her Gluten Free Yellow Cake Mix, making pumpkin muffins can be easy to do yourself. This particular muffin has a moist crumb and is not too sweet, even though it’s a cake mix base.

Gluten Free Pumpkin Muffins

GF Pumpkin Muffins
Makes 12-16 muffins.
1 box of Gluten Free Yellow Cake Mix
3 eggs
1 cup canned pumpkin puree (note– not one can, just one CUP)
2 tsp vanilla
1/2 cup butter (melted)
1 T Cinnamon or Pumpkin Spice (or any spice that you like with pumpkin)
and cinnamon sugar to sprinkle on top.

  • Mix the melted butter, pumpkin, eggs, and vanilla for about 30 seconds in mixer.
  • Add cake mix and mix for about 2 more minutes on medium.
  • Line muffin pan with paper liners, using a large cookie scoop filled *almost* full,but not quite, fill each paper liner with the batter.
  • Sprinkle each muffin with cinnamon sugar. Bake for 15-17 minutes at 350 degrees. Ovens may vary, so you might want to set a timer for 13 & keep checking on them. When a toothpick comes out clean, they are done!
